Okay. It's now 2022. I don't know if a lot has happened or not. I'm a mom. I just don't remember. Anyway. Right now, my family and I are in living in Dallas, Texas. Lately, I've been doing a self-proclaimed Vegetarian Challenge for 21 days. It was inspired by author, Tabitha Brown, who is a vegan, and her journey to becoming vegan. For some reason, it just inspired me. Now, the difference between vegetarian and vegan is animal products. Most vegetarians will eat eggs, milk...dairy. Vegans don't. For many vegans, their decision to be vegan is not just health, but morals...like they believe that we should not kill animals. They don't even wear certain clothes like wool and wear things like organic cotton. Now why am I making the transition to vegetarianism? Umm...well why not? I decided to push myself and try it. It's been about 14 days. So far, I FEEL so much more energized and happy. I already eat really really healthy. I don't eat a lot of processed foods. I eat very lean. Lots of vegetables already. And perhaps...I was already subconsciously making this transition. And the Holy Spirit (I'm a Christian) lead me to take my health and wellness a step further. So...here I am...on this journey. I have noticed that I don't look as bloated. Maybe the tons of baked chicken I was eating was causing this bloat and inflammation??? And I just got over COVID. Interestingly, I was eating all plant based (well...I still included eggs and yogurt...trying to figure out the protein thing)...and my smell and taste were MILDLY impacted. I can pretty much taste and smell all my food. And 3 days post my positive covid test, I've feeling pretty damn good!
Listen, making this transition isn't easy. I'm still working through the mindset of "will I get enough protein??" It's a learning curve for sure....so start with one meal at a time. And maybe with the easiest meal...like for me...breakfast is already vegetarian. What makes it vegetarian and not vegan? I add casein which is a cow based milk product. Or I top with with yogurt. Easy swaps...I'm just waiting to run out of casein and then I'll switch to plant based protein. I'm switching to a soy based yogurt and we will see how that works. Trial and error..here we come!!!

Ladies...or I guess guys too...If you need some inspiration to making this change...this lady known as Chef Babette...is 70 in this pic (she's 72 in 2022 or about to be...not sure when her birthday is). I'm just gone drop her picture right here. So....yeah.
This is what I want to aspire to when I am 70. I don't want to take any pills (beside my multivitamins) or be on any meds for anything regarding my health that I can control by a healthy lifestyle.
Actually, most of these are vegans BUT if you are struggling with protein, I'm still working in eggs and yogurt. And I am slowly working out eggs (embracing tofu) and planning to try soy yogurt this week. And some other things like seitan, tempeh and other alternatives.

Keep in mind...these are MY faves! So..as you explore...figure out what you appeal to! I appeal to easy, quick, home cooked, meals that will be good for my family (although they are not vegan/vegetarian...maybe my kids are...they just eat noodles haha). But think about what YOU like about what you eat, and ONE meal you can swap!
